The organic buckwheat flour used in the preparation of the galettes is produced by the Moulin de la Fatigue located in Vitré in Ille-et-Vilaine (35). 130 years old, the Moulin de la Fatigu has been able to preserve its gear system, its flint stone millstones and its sifting machines (a machine used to separate the flour from the bran by sieving) which give all its richness and quiet strength to flour. “We have chosen for you Breton buckwheat flour bearing the “Moisson du Terroir” label. La cidrerie de Colpo in Morbihan : No good cider without good apples... At the Cidrerie de Colpo, partner of our creperie, local varieties from traditional orchards are preserved.
